Gluten Free Pumpkin Spiced Waffles
Ingredients
- 1 cup rolled oats
- 1/4 cup unsweetened almond milk
- 1/2 cup pumpkin puree
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tbsp baking powder
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
Instructions
- Combine all dry ingredients in a blender and blend until smooth. Add remaining ingredients and blend until just combined.
- Let the batter sit for at least 5 minutes, for the mixture to thicken.
- Preheat a waffle iron and spray with coconut oil, or other non-stick cooking spray. Once hot, pour 1/4 cup waffle batter on the pan. Cook according to manufacturer's instructions.
- Repeat until all the batter is used up. Serve with fresh fruit and/or maple syrup, or any toppings you prefer.
