Combine all dry ingredients in a blender and blend until smooth. Add remaining ingredients and blend until just combined.
Let the batter sit for at least 5 minutes, for the mixture to thicken.
Preheat a waffle iron and spray with coconut oil, or other non-stick cooking spray. Once hot, pour 1/4 cup waffle batter on the pan. Cook according to manufacturer's instructions.
Repeat until all the batter is used up. Serve with fresh fruit and/or maple syrup, or any toppings you prefer.
