Cheese Sauce
Ingredients
- 2 medium potatoes
- 1/4 white onion
- 1/2 carrot
- 1/2 roasted red pepper
- 2 tsp salt
- 2 tsp garlic powder
- 3/4 cup nutritional yeast
- 1/4 cup salsa
Instructions
- Boil potatoes, onion, and carrot in a medium pot until tender. Save about 1/3 cup of water from the veggie boil.
- Transfer veggies and water into a high speed blender or food processor. Add in the rest of your ingredients and blend until creamy. Taste and add extra seasonings if necessary.
Notes
Extra Calories – Add 1/4 cup soaked raw cashews (they also give the sauce a creamier texture).
Plan Ahead – Make sauce the day before.
Tip – You can use jarred roasted red peppers, or roast the red bell pepper yourself in a 450 degree oven for about 25 minutes.
