Romaine Salad with Avocado Dressing
Ingredients
For the Salad:
- 1 head romaine chopped
- 4 radishes sliced (optional)
- 1 medium cucumber sliced
- 1 red bell pepper chopped
- 4-5 rounds small red onion
For the Dressing:
- 1 ripe avocado
- 1 lemon juiced
- 1/2 tsp salt optional
- 1/4 cup almond milk
- 1 tsp black pepper
- 1/2 cup fresh basil leaves
- 1/2 cup fresh cilantro
- 1/2 cup toasted pumpkin seeds.
Instructions
- Combine all ingredients for the dressing in a blender and process until smooth.
- Combine all ingredients for the salad in a large bowl and toss to combine.
Notes
Plan Ahead:
-Chop romaine and red bell pepper.
-Slice radishes, cucumber, and red onion.
-Prepare dressing.
