Ingredients
  

  • 1 can chickpeas
  • 1 can black beans
  • 1 can red kidney beans
  • 2 onions chopped
  • 5 clove Garlic chopped
  • 2 medium sweet potato peeled and chopped
  • 1 medium head cauliflower chopped
  • 2 can diced tomatoes in sauce
  • 2 tbsp curry powder
  • 1 1/2 cup full-fat coconut milk

Instructions
 

  • Rinse and drain beans. Transfer to a 6½ quart slow cooker.
  • Combine all ingredients except the coconut milk into a slow cooker and set to low. Cook for 6-8 hours or until vegetables are all soft.
  • Stir in coconut milk and serve.
