Fresh Veggie Sushi Burritos
Ingredients
- 2 cup cooked rice white or brown
- 1/2 avocado
- 1/2 cucumber
- 1/2 carrot
- 2 tbsp rice vinegar
- 1 tbsp raw or coconut sugar
- 2 nori sheets
Instructions
- Slice your veggies. Add cucumber and carrot to vinegar mixture and stir until completely coated.
- Spread cooked rice evenly over nori sheets, making sure to leave about an inch on the opposite side your rolling.
- Layer your cucumber, carrot, and avocado onto your rice.
- Roll to make as round as possible. Serve with low-sodium soy sauce.
