Preheat oven to 400°F. Grease a 12 cup muffin pan and place four tater tots in each cup. Bake for 15 minutes.
Add the rest of the ingredients (except for cheese sauce) into a large bowl and stir with a fork until well combined. Add lentil mixture to a skillet over medium high heat for around 5 minutes.
Remove the muffin pan from the oven and use a tamper or whatever kitchen tool you have to press the tater tots down and form into a tater tot cup.
Fill the tater tots with the mashed lentil mixture and top with cheese sauce.
Place the tater tots back in the oven and cook for another 10-15 minutes.
Remove the tots from the oven and let cool for 5 minutes before removing them from the muffin pan.
Top with sriracha mayo and serve. (optional)
