Banana Nut Bread
Ingredients
- 1 3/4 cup all-purpose flour
- 2 to 3 very ripe bananas peeled
- 2 tbsp coconut oil melted
- 1 teaspoon baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar 1/2 cup if you like it less sweet
- 1 large flax seed egg 3 tbsp ground flax seed with 3 tbsp water. Let sit for 5 minutes or until thick
- 1 teaspoon vanilla extract
- 3/4 cup unsweetened apple sauce
- 1/2 to 2/3 cup Chopped Walnuts optional
Instructions
- Preheat the oven to 350°F and grease a 4×8-inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted coconut oil and apple sauce into the mashed bananas.
- Mix in the baking soda, baking powder and salt. Stir in the sugar, flax egg, and vanilla extract. Mix in the flour.
- Fold in the nuts (if using) and pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F or until a tester inserted into the center comes out clean.
- Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
