Pita Cheesy Pizza
Ingredients
Pita Pizzas
- 2 pita bread or use gluten free pita
- 1/2 cup pizza sauce
- 1/4 cup mushrooms or any veggies you enjoy
Cheese Sauce
- 1/4 medium potato
- 1 tbsp white onion chopped
- 1 tbsp carrot chopped
- 1 tbsp roasted red pepper
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 3 tbsp nutritional yeast
- 1 tbsp salsa
Instructions
Cheese Sauce
- Boil potatoes, onion, and carrot in a medium pot until tender. Save about 1/3 cup of water from the veggie boil.
- Transfer veggies and water into a high speed blender or food processor. Add in the rest of your ingredients and blend until creamy. Taste and add extra seasonings if necessary.
Pita Pizzas
- Pre-heat oven to 400 degrees.
- Layer pita bread with pizza sauce, cheese sauce, and mushrooms. Place in the oven for around 20 minutes.
- Remove your pita pizza from the oven and let cool for 5 minutes. Enjoy!
Notes
Tip – Add 1 tbsp soaked raw cashews to give the cheese sauce a creamier texture.
Plan Ahead – Prepare Cheese Sauce and chop mushrooms the day before.
