
Berry Easy Pancakes
Ingredients
- 1/4 cup gluten-free oats
- 1/4 cup almond milk
- 1/2 ripe banana
- 3 tsp maple syrup
- 1 dash of cinnamon optional
- 1/4 cup blueberries fresh or frozen
Instructions
- Add oats to your high speed blender or food processor and pulverize oats into flour. Add the rest of your ingredients (except blueberries) and blend. Stir in blueberries into your batter.
- Place a lightly oiled (or stick free) skillet on medium heat. Drop batter by large spoonfuls onto the skillet, and cook until they are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
- Top with extra blueberries and maple syrup

Plan Ahead – Prepare the batter the night before.
