carrot

rice vinegar

raw or coconut sugar

nori sheets
Instructions
Slice your veggies. Add cucumber and carrot to vinegar mixture and stir until completely coated.
Spread cooked rice evenly over nori sheets, making sure to leave about an inch on the opposite side your rolling.
Layer your cucumber, carrot, and avocado onto your rice.
Roll to make as round as possible. Serve with low-sodium soy sauce.
Notes
Plan Ahead - Prepare rice, slice cucumber and carrot the day before.
Lower Fat Option - Swap Mushrooms for Avocado.
