Vegan Chocolate Chip Pancakes

Ingredients
  

  • 1 ripe banana
  • 1 1/2 cup flour
  • 1 1/4 cup non-dairy milk
  • 2 tsp baking powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1/3 cup chocolate chips

Instructions
 

  • Add ripe banana into a large mixing bowl.
  • Mash the banana until creamy and smooth.
  • Add the rest of the ingredients (except for chocolate chips) into the bowl and stir until the mixture is well combined.
  • Stir in your chocolate chips.
  • Heat a lightly oiled frying pan or griddle over medium heat.
  • Pour the batter onto the frying pan or griddle, about ¼ cup for each pancake. Flip the pancake, when bubbles begin to appear on the surface and the bottom is golden brown. Do the same for the remaining batter. Serve hot.

Notes

For thicker pancakes use 1 cup of non-dairy milk instead.
