Preheat oven to 375°F
In a medium pan, on medium heat add peaches, sugar, cinnamon, nutmeg, lemon juice and cornstarch (mix corn starch with little water to make a slurry)
Bring to a slow boil or until sugar is melted and peach juices are released
Remove from heat and set aside
In a medium bowl add all dry ingredients and whisk together
Make a well in the middle and all the milk and vanilla extract. Combine
Add melted butter and mix
In a 2-quart casserole dish add the batter and spread
Pour in the peach sauce until evenly spread
Bake in a 375°F oven for 40mins or until the batter is golden brown
