Vegan Peach Cobbler

Ingredients
  

Peach Filling

  • 4 cups peeled and sliced fresh peaches – frozen peaches can be used too
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • ½ tsp cinnamon
  • tsp nutmeg
  • 1 tsp lemon juice
  • 2 tsp corn starch

Batter

  • 1 cup all-purpose flour
  • 1 Tbsp. baking powder
  • ½ cup granulated sugar
  • 1 tsp salt
  • 4 Tbsp. melted vegan butter
  • 1 Tbsp. vanilla
  • ¾ cup non-dairy milk

Instructions
 

  • Preheat oven to 375°F
  • In a medium pan, on medium heat add peaches, sugar, cinnamon, nutmeg, lemon juice and cornstarch (mix corn starch with little water to make a slurry)
  • Bring to a slow boil or until sugar is melted and peach juices are released
  • Remove from heat and set aside
  • In a medium bowl add all dry ingredients and whisk together
  • Make a well in the middle and all the milk and vanilla extract. Combine
  • Add melted butter and mix
  • In a 2-quart casserole dish add the batter and spread
  • Pour in the peach sauce until evenly spread
  • Bake in a 375°F oven for 40mins or until the batter is golden brown
